Apple Almond Crumble Cake

One of the highlights of moving to Toronto was discovering how beautiful the season fall is in this part of the world. I loved everything about it – the drastic color change of trees from not just to orange as I had previously thought, but red, yellow, pink and everything in between; the smell of the season special drinks and of course the baked goodies.

I am passionate about cooking and although I occasionally baked back home- brownies and cheesecakes on repeat- I have a little difficulty with sticking to instructions as precisely as bakers do. I always mess with a given recipe in the name of tweaks, improvisation or simply the absence of an ingredient, but honestly it’s more because cooking (and baking) is an art form for me, not an exact science.

So when I came across not one but two recipes that hit me with the “I have to try this right now!” bug, I did what any logical person with my mind set would do. I mixed the two up!

The recipes I am talking about are the perfect fall bakes to celebrate the season. The first one is French Style Apple Cinnamon Cake by Paulami of Spice Trip with Paulami. The other one is an Awesome Apple Almond Crisp by Zoë François of Zoe Bakes. They both have a wonderful collection of recipes that’s worth checking out.

I liked the idea of an apple cake because it sounded very classic fall and the crunch and crumble component of the crisp. So as fall made it’s quiet exit from Toronto with the first snow during the day last week, I baked my first fall dish to celebrate my first Canadian fall, well spent.

Apple Slices in Sugar and Cinnamon


  • Apples: 4, peeled and thinly sliced.
  • Cinnamon : 1 tsp +1 tsp
  • Brown sugar: 1/4 cup +1/2 cup
  • Flour: 1 cup
  • Baking powder: 1 tsp
  • Salt: 1/2 tsp
  • Almond butter & unsalted butter: 1/2 cup (3:1 ratio)
  • Eggs: 3
  • Vanilla extract: 1 tsp
  • Milk:  1/2 cup
  • Oats: 1/2 cup (remember not an exact science, so more if you think so; the idea is cover the top of the cake with crumble)
  • Almonds: 1/2 cup, toasted and roughly chopped (same here!)


Dry and Wet Ingredients

In a bowl, mix the sliced apples with 1 tsp cinnamon and 1/4 cup brown sugar and set aside. In a separate bowl, mix the wet ingredients- the eggs (mix yolks and whites separately for fluffiness), 1/2 cup sugar, and melted butter until well combined. Shift the flour, baking powder and salt. Gradually add the dry ingredients to the wet mixture and combine gently. Add the set aside apple mixtures and mix well.

Coarsely Grinding the Nuts

Line the baking pan with parchment paper (mine was a square Betty Crocker but you can use 9 inch round pan as well). Add the cake mixture to the baking pan.  For the crumble- mix oats, almonds, milk and 1 tsp cinnamon together. Layer the crumble mix over the cake mixture and put it in the oven to bake.

Preheat the oven  at 350 F /180 C and bake for 40-50 mins. You know the drill, cook until an inserted toothpick comes out clean.
